A Great Summer Line-Up

I love all the dishes this week! They highlight the seasonal offerings at the market and aren’t too fussy. As we shift into the second half of summertime, that’s just what I want. This week’s strategy is to use flavorful, fresh, versatile sauces so that we can spend less time in the kitchen and more time with our crew.
The star of Monday’s Machego-Romesco Burgers is the Romesco sauce. Its bright and tart from the vinegar and yet earthy and fresh from the almonds and tomato – you really have to try it. And, if you buy your almonds already toasted, it’s a no-cook sauce! You will be dipping everything in it.
Tuesday is a true flavor punch – just what you would expect from Jerk Chicken and Peach Salsa. When that jerk paste hits the grill, you will be immediately transported straight to the Caribbean Islands. Its sweet and spicy without being hot.
I couldn’t do a no-cook sauce week without my go-to, back pocket sauce – pesto. Wednesday we are having Garden Linguini with Almond Pesto. It’s a familiar and comforting dish here at my house.
Thursday’s Cobb Salad is probably the house favorite this summer. My youngest got us turned on to it and now it’s in heavy rotation at lunchtime. The twist of adding fresh herbs elevates it a bit but Man, that bacon is the dealmaker!
I am passionate about families and their time spent together. I just want to lighten your load and share what I have learned. I am always looking for ways to make my days a little lighter – like toasting all the almonds for the week at once or grilling extra chicken when I’m already standing at the grill anyway.
Eating well is the easy part. The planning and list making are something I love to do, but I realize it’s a pain in the neck for some. With that chore removed, I hope that preparing dinner can be enjoyable and maybe even a little exciting!
