Can I Just Check the Box?
C'mon, sometimes we just need to check the dinner box. But, can we still feel good about our choices? Can they be real food choices? Hells ya!
As I peek ahead, next week is particularly busy. We’ve got birthdays, overlapping sport’s seasons, play practice, a traveling husband and … work! Listen, we have to eat. And while I’d be cool with a glass of wine, an aged Gouda and fist full of almonds, my gang needs a bit more substance. I’ve got a plan to ensure that we sit down, eat a real dinner and get right back to our crazy schedule. Let’s break it down.
I’ll knock out my grocery shopping between meetings on Monday. While unpacking, I’ll take 5 whole minutes to season Tuesday’s beef and stash it in the fridge. Monday’s Crab Salad Melts and Roasted Veggies
are ready in less than 30 minutes. Check!
Tuesday is a mind-blower. The cooking method is genius and perfect for my 3, yes 3, carpool afternoon. I will pop the Eye-of Round Roast
into a 500º oven for less than 30 minutes, turn the oven off and walk away – for 2 ½ hours! Not joking. The result is a low and slow roasted beef that is worthy of Sunday dinner. Check!

Thursday’s Skillet Pot Pie
was my Mom’s go-to for leftover beef, steak or even ground beef. I use strategic, time saving purchases to ensure a speedy success. I buy a quality pre-made piecrust, pre-sliced mushroom and frozen organic veggies. It all comes together in about 30 minutes and tastes like a fancy all-day stew. Check!
When we have super busy weeks like this, let’s make dinner a priority while we check the box. It’s probably the only time I will get to look my crew in the eyeballs all week!
