We are back from Spring Break and it was a wonderful time to recharge, reconnect, enjoy some the things that get missed in the day-to-day hubbub. We managed to pack a few first-time experiences in with long floats in the ocean and lazy hours in the sand. We made fresh Sea of Cortez Red Snapper tacos with the day’s catch and even tried a few new dishes including a spicy shrimp and crab stuffed avocado and green chilaquilles. Oh, and a Tequila Mojito! All told, the best part for me was watching my big kid be little, my little be daring.
Soon enough everyone will be back where they belong-work, school, etc. After all the unpacking, and Good God all the laundry, I am so glad that I have my plan waiting for me to use for dinners this week. I printed my list, filled in with a few breakfast staples, and I am ready to hit the ground running on Monday morning.
I went for a bit of comfort this week – I always do when we return from a trip. Chicken and rice, creamy polenta, and sausage subs – YUM- we are home!
