If it Ain't Broke

We are sticking with our recent back to basics theme this week. Who eats something different every night? Not real families, not my family.
The ones that I like to roll out over and over must be easy to prepare, nutritionally balanced family favorites like this week’s Chicken Cacciatore and omelettes. I know, omelettes? Yup. I taught my daughter’s Girl Scout troop to make them and now she’s cooking dinner – and she’s psyched to do it! I’m a genius.
On another note, I have received a ton of requests over the past few weeks for recipes that work for folks who are gluten free, dairy free, or nixing sugar. This week’s recipes satisfy all of these or are very easily adaptable  - even at the last minute. Skip the egg noodles on Tuesday and serve with roasted cauliflower or even brown rice. Omelettes can be cooked in a bit of olive oil just as easily as butter. And, wait until you try that dressing on the Southwest Salad – creamy, herby, tart – boom.
Thanks to everyone that has been sending me your Real Family Real Food repeat requests too– I’m really enjoying hearing what’s working for you and your real families.
Have a wonderful weekend.
PS For the record, I see gold and white.  I’m either super dope or a super dope. We’ll see.
