Now you need a house pesto and house vinaigrette. The one that your crew likes the best. Is it sweeter, saltier, a little shallot, a few dried herbs, no cheese? Buy a few canning jars at the grocery store and get to testing – these are very inexpensive condiments to make.
I have posted the House Pesto recipe on the blog. I have also included the ingredients in their own section on the Shopping List. I hope you’ll do it – it takes no time and tastes so fresh in the winter.
A basic vinaigrette ratio is 3-1, oil to vinegar. From there, salt, pepper, Dijon mustard, shallot, lemon zest, Herbes de Provence – all are great additions. This is our House Vinaigrette:
3 tablespoons very good olive oil
1 tablespoon champagne vinegar
1 teaspoon Dijon
1 tablespoon minced shallot
½ teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
From here I can add lemon juice, a pinch of sugar, a little honey – whatever I want.
