Pizza Dough

This is my go-to recipe. You will really taste the difference.

4 cups bread flour – whole wheat if you can find it is a good choice
1 packet instant yeast
½ cup warm water and 1 1/4 cups water at room temp
2 tablespoons extra virgin olive oil, plus 1 teaspoon for oiling the rising bowl
1 ½ teaspoon salt
Measure the ½ cup of warm water into a glass 2 cup measuring cup or bowl.
Sprinkle the yeast over the water and let stand for 5 minutes.
Add enough room temp water to fill the cup to 1 ¾ cups.
Add flour and salt to the bowl of a standing mixer fitted with the paddle.
Mix on lowest speed for 2-3 seconds to combine.
Add oil to the yeast mixture.
Add this to mixer slowly while mixer is set to medium low. Mix until it’s combined.
Stop the mixer and switch to the dough hook.
Mix, knead, for 5 minutes on medium low and it forms a ball.
Place ball into a large oiled bowl and cover with plastic wrap.
After 2 hours, punch down dough and cover again.
Its ready in 1 more hour.
