Slow Cooker Groove
I’m in one right now – a slow cooker groove. I left mine out on the countertop and it continues to inspire. It’s super satisfying to prep the ingredients, set the slowcooker, and then walk away. Then, how awesome to walk in the door to a clean kitchen and dinner cooking – hands free. I actually take the time to set the table – myself!
Since I’m in the slow cooker zone and it’s St Patty’s Day, I found a method to combine the two and it’s by far the best corned beef I have ever made. The addition of fresh thyme, chicken broth and mustard seeds elevated it from the traditional “Irish boiled dinner” that I have always mimicked. Even the vegetables were delicious. But, as good as it was as a St. Patricks dinner, the leftovers that became reuben sandwiches are killer – not to be missed.
Finally, and perhaps the most meaningful part of this week’s dinner, was the opportunity to remember, share stories and photos of my grandmother and her Stanley clan. I can see her in all of our faces.
