Clinging to the Summer Vibe

FACT: Come July 15th, I am ready for everyone to get back to school.
FACT: Come August 15th, I don’t want summer to end!
I mean we finally got our groove on! I love the time together. We have lazy mornings, loosely scheduled days and late night movies. We travel on a whim, catch a lot of baseball games, hangout with friends and everyone is pretty chill. 
I am determined, as I say every year, to roll this vibe into Back-to-School. One way to ensure my mission’s success is to – you guessed it – have a dinner plan. No reason to actually add stress to the mix.
This week’s plan contains simply prepared house favorites. Now is not the time to stretch my family’s palette. They are dealing with new teachers, new friends, new schools, and all the excitement and stress that come with it. Dinnertime will be a soft landing place, a comfort zone with yummy, healthy food. Think Steak Kebabs, Baked Chicken and Mac & Cheese. Solid.
I wish you and your families a wonderful, chill, warm summer vibe as we ALL get back to school.
