Remember that? Keep it simple, Stupid? Wait! Were you thinking Detroit Rock City?? Love you!  But, no.
 
We are applying the K.I.S.S principle to The Plan the week.  In fact, two nights are no-cook dinners – yup!

I changed things up a little this week. Since I have so many hardboiled eggs, we are going vegetarian on Monday. FULL DISCLOSURE: It's vegetarian with a bacon option! It’s yummy Egg Salad Pita BLTs.
 
Tuesday is a slowcooker Thai chicken dish that is a long standing hit with our Real Family Real Food crew so I brought it back. It’s mellow and delicious piping hot or at room temp. It’s Thai Coconut Chicken with Jasmine Sticky Rice. Ya, I said sticky rice!
 
Next is Wednesday’s Ravioli with Pepperoni Sauce. I used a high quality premade ravioli – time saver! This sauce was the a winning dish on Top Chef. I know, it sounds weird but the judges continue site it as one of their favorite dishes – ever. I tried it and it is so good. Best part? Totally do-able on a weeknight. TIP: If you have the time, find an Italian market that makes their own pastas for both the ravioli and the pepperoni.
 
Looking for something else to do with leftover chicken?? Me too. These Thai Chicken Tacos with Peanut Sauce are just the ticket. We ate them outside on the back steps in the last of the afternoon’s sun – perfection.
